Semolina Pudding (Ravo)
2 litres milk
100 grams semolina
2 cups sugar
4/5 green skinned cardamoms coarsely pounded
1-teaspoon nutmeg-cardamom powder
¼ cup fried almond flakes
½ cup fried seedless raisins
1-teaspoon vanilla essence
½ cup pure ghee /butter
Take a heavy bottomed pan. Add the semolina and lightly roast it. Keep on stirring it turns ivory in colour.
Add butter/ghee sugar. Stir and gradually add the milk and keep stirring. Raise the heat on the stove till the mixture starts boiling.
Lower the flame and keep stirring till the milk mixture becomes thick like porridge. Taste it to check for sweetness. Remove from stove.
Add the nutmeg-cardamom powder and vanilla essence. Pour into a glass bowl. Garnish with almonds and raisins. (You could add a few pink rose petals.)
